Pumpkin Muffins

Fall is just around the corner....one of my absolute favorite seasonal fall items is pumpkin. Here is a recipe for pumpkin muffins which are made with whole grains and are not overly sweet. They are good served alone or with a little bit of reduced fat cream cheese.

Pumpkin muffins:

nonstick cooking spray
1 3/4 cups whole wheat flour
3/4 cup brown sugar
1/2 cup oat bran
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp ground cloves
1 cup canned pumpkin
2 eggs
1/2 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup semi-sweet chocolate chips

Preheat oven to 350 F. Coat a muffin pan with non stick cooking spray.

In bowl mix pumpkin, eggs, applesauce and vanilla, stir until well blended. In a separate bowl combine and mix all dry ingredients. Combine wet and dry ingredients until well blended. Stir in chocolate chips. Place batter into muffin pan and bake for 20-25 mins or until toothpick inserted in center comes out clean.
