Sweet potato fries

If you are looking for a delicious and healthy alternative to french fries...try oven baked sweet potato fries. For a fun twist, try to find purple sweet potatoes.

Recipe:
4 medium sweet potatoes
1 Tbsp of canola, olive or grape seed oil
1 tsp of salt
cooking spray

optional spices: (add these if you like spicy fries)
1/4 tsp of pepper
1 1/2 tsp paprika
1/8+ tsp cayenne

Preheat oven to 450 F. Scrub potatoes well and dry them with a towel. Cut sweet potatoes into 1/4 inch strips and place into a bowl. Toss potatoes with oil and then add seasonings, toss until well coated. Spray sheet pan with cooking spray and spread potatoes on sheet in a single layer. Bake in preheated oven for 20-30 minutes or until fries are soft. Flip fries half way through cooking.
