Here is one of my new favorite recipes:
2 large chicken breasts (cut in half) or 4 small chicken breasts - boneless/skinless
1/2 cup plain non-fat Greek Yogurt
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp black pepper or pepper blend
1/2 tsp paprika
Preheat oven to 425 F. Place chicken (4 pieces total) in lightly greased pan. Mix remaining ingredients in a bowl and and spread mixture evenly over chicken. Cook in preheated oven 25-30 mins, or until topping is lightly browned and juices run clear when chicken is cut.
This recipe can easily be doubled.
