Preheat oven to 400 F.
Mix these ingredients in bowl:
- 2 1/2 cups rolled oats
- 1/4 cup oat bran
- 1/4 cup steel cut oats
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2+tsp cinnamon
In a separate bowl mix the following:
- 2 cups of milk or buttermilk
- 1 egg
- 1/3 cup applesauce
- 1/4 cup oil - such as grape seed or canola
- 1/4 cup brown sugar
Combine contents of both bowls and pour mixture into greased 8x8 pan. Bake uncovered for 20 mins. Remove from oven, gently stir in the following:
- 2 cups of fresh or frozen fruit (thawed) - such as chopped apples/pears or berries.
