Sweet popcorn treat!

Popcorn is a whole grain, which makes it a great choice for a snack. 

You can easily make "homemade" microwave popcorn. Here is how. 
1/4 popcorn kernels (unpopped)
1 tsp oil (healthy fat - such as canola or grapeseed)
brown paper lunch sack

Mix oil and kernels in cup and pour into the paper bag, fold down top of bag and microwave for about 2 minutes, listening to popping and stop sooner if you popping slows down (just like regular microwave popcorn). The popcorn and oil have 160 calories, 5 grams of fiber and 4 grams of fat. Add a pinch of salt or Parmesan cheese. 

For a sweet treat, here is my favorite popcorn topping recipe....

1 tbsp butter
1 tbsp brown sugar
1 tsp cinnamon

Put butter and brown sugar in small bowl and microwave until butter is melted. Mix cinnamon into butter and sugar mixture. Place popped popcorn into bowl, stirring popcorn and drizzle slowly with sugar mixture. The whole bag including topping will have about 320 calories, 5 grams of fiber and 15 grams of fat. You can use light butter if you want to save on fat. This is a really yummy treat, one bag can easily make 2 servings.
