Recipe - baked oatmeal with fruit

Here is a recipe for delicious breakfast treat that you can make ahead of time and reheat individual servings in the microwave.


Preheat oven to 400 F. 

Mix these ingredients in bowl: 

  • 2 1/2 cups rolled oats
  • 1/4 cup oat bran
  • 1/4 cup steel cut oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2+tsp cinnamon

In a separate bowl mix the following: 

  • 2 cups of milk or buttermilk
  • 1 egg
  • 1/3 cup applesauce
  • 1/4 cup oil - such as grape seed or canola
  • 1/4 cup brown sugar

Combine contents of both bowls and pour mixture into greased 8x8 pan. Bake uncovered for 20 mins. Remove from oven,  gently stir in the following: 

  • 2 cups of fresh or frozen fruit (thawed) - such as chopped apples/pears or berries.
Bake for 20 more minutes. Remove from oven and serve with Whipped Cream.
