Spinach & Feta Quesadillas

Ingredients:
1 tsp canola or grape seed oil
1/2 small onion, minced
2-3 cloves of garlic, minced
10 oz chopped frozen spinach, thawed
1/4 c crumbled feta cheese
1/2 c grated Parmesan cheese
1/4 cup canned white beans or garbanzo beans - rinsed, drained and mashed
1/4 tsp black pepper
4 whole wheat taco sized tortillas

Heat oil in skillet, saute onion. When onion starts to become translucent, add garlic. Cook until garlic is lightly brown. Add spinach, cook until liquid from spinach is evaporated. Add remaining ingredients (except tortillas) and stir until cheese is melted. Spread 1/2 cup filling into tortilla and fold over. Coat skillet with cooking spray or a drop of oil and lightly brown quesadilla in skillet on each side. 

These are delicious!! They go great with a bowl of chili or your favorite soup....Enjoy!!
