Awesome chocolate treat for those with food allergies

Having a healthy relationship with food includes eating a treat if you really want one, just be sure to make healthy food choices most of the time. Store bought treats can be challenging if you have a food allergy. My daughter is allergic to peanuts and we avoid all nuts, therefore most store bought chocolate candy is not safe for her to eat. My child shares my love for chocolate, so we make a lot many of our chocolate treats at home. This is a very easy recipe which can be easily made without the most common food allergens and is delicious!!


Chocolate Coconut Stacks
3/4 c of Enjoy Life Mega Chunks - Chocolate Chips (these are dairy free)
1/2 cup coconut milk (can easily substitute soy milk, rice milk)
2 tbsp pure maple syrup
3/4 c Sunbutter (peanut butter substitute made from sunflower seeds)
1 tsp vanilla
2 2/3 cup shredded coconut
1/3 c sunflower seeds

In a medium glass bowl add the chocolate, Sunbutter and maple syrup. Microwave on medium for 2-3 minutes, stopping every every 45 seconds to stir. Continue to microwave until the mixture is smooth after stirring. Mix in remaining ingredients and stir until completely combined. Line two large baking pans with wax paper. Place heaping teaspoons of chocolate mixture on baking sheet in individuals portions. Place in refrigerator for at least 30 minutes and then serve. Store remaining Chocolate Coconut Stacks in refrigerator. Makes about 48 treats.
