Quiche Recipe

One of my favorite foods is Quiche. You can make this a healthier choice if you skip the heavy cream and full fat cheese. This one is super easy and makes a great dinner entree with a side of veggies or a salad. Even my kids eat it.

10oz pkg of frozen spinach - thawed & drained
3 eggs
3/4 cup of skim milk
2 cups of shredded low fat cheese (I use the  Mexican cheese blend that is already shredded, cheddar works well too)
1/3 cup grated parmesan
1/4 tsp pepper
4 strips of bacon cooked well and crumbled (I use nitrate free bacon. It is delicious w/out bacon too)
1 frozen whole wheat pie crust - they have these at Whole Foods (you can also make this without a crust)


Remove frozen pie crust from freezer and place on counter (it will thaw enough to use it in 15 mins or so). Preheat oven to 350 F. Whip eggs with a fork or wisk in a medium sized bowl. Add remaining ingredients, blend well. Pour into pie crust or pie dish. Place on baking sheet and bake for 35 to 40 mins or until the top begins to become golden brown and quiche is set.

Refrigerate left overs.

Great way to have meatless Monday! (if you leave out the bacon)
