National Egg Day

Ok, so there is a day for just about everything....June 3 is National Egg Day. Eggs are one my favorite foods. As long as you don't have high cholesterol, it is fine to eat an egg each day. Eggs are an inexpensive source of great protein. They are easy and can be great at any meal. Egg salad, egg burritos, quiche, frittatas, etc.

Here is a scrambled egg recipe that I love:

sundried tomatoes packed in olive oil/herbs
2 eggs - scrambled
spinach - fresh or frozen and thawed/drained
1 tbsp feta cheese - crumbled

Take a little of the oil from the sundried tomatoes and add to a small skillet. Saute spinach and 3+ sundried tomatoes in pan. When spinach is cooked add eggs and feta. Cook over medium  heat until eggs are cooked. Serve with toast and fruit. Super easy and delicious!!
