Want to give up chips.....try this!

Until you try this, try to be open minded. I admit it sounds a little crazy, but make baked chips from Kale. Here is a recipe from Whole Foods   http://www.wholefoodsmarket.com/recipes/3182

When I make them, I usually just add the oil and a pinch of salt.  My kids like these so much that my 8 year old daughter recently tried to make them herself in the microwave. Much healthier than a classic potato chip! You can buy a gigantic bag of torn kale at Whole Foods for about $5, you can easily make a tray everyday for a week. They don't keep well, so don't make too much at once. You can also try Kale salad one of my other favorites because unlike regular salad the longer it sits in the dressing the better it gets. You can keep in in the refrigerator with the dressing on it for days. Mix the juice of one to two fresh lemons with a tbsp or two of olive oil and clove of fresh minced garlic. Pour over a serving sized salad bowl filled with torn Kale leaves. Massage the dressing into the leaves, refrigerate until ready to serve.  Serve with Parmesan cheese.  Let me know what you think!

Enjoy!  Maria =)
