- Eggs over easy or scrambled served with cut fruit, fresh tomatoes and toast
- Frittatas or omelets w/ lots of veggies such as spinach, broccoli, mushrooms, onions, peppers and served with toast
- Egg burritos made with scrambled eggs on whole grain tortilla with salsa and guacamole served with fresh fruit
- Chicken or turkey sausage served with flourless pancakes with fresh fruit
For toast I often use Ezekiel bread which is made from sprouted grains. It is higher in protein and lower in carbs than regular bread and has a dense texture. It is found in the frozen section of most grocery stores. It can be toasted in a few minutes.
Breakfast for dinner can literally be thrown together in about 10 or 20 minutes. You can use leftover or frozen veggies such as spinach or broccoli in frittatas. If you add cheese, just remember to use a small amount, preferably reduced fat.
